Blue Steel #2 (Aogami #2) is a high-carbon tool steel alloyed with tungsten and chromium for wear resistance and toughness, with a touch of vanadium for fine grain. In Santoku form, blades span  5 to 7 inches with a thin double bevel, flat belly, and low tip. Heat-treated to high hardness, it holds a keen edge yet sharpens predictably on water stones. Because it is reactive, a patina will form; kurouchi or stainless cladding reduces exposure. Care for Blue Steel #2 by hand washing only, drying at once, wiping a thin coat of camellia or mineral oil, avoiding soaking or dishwashers, and storing fully dry.
