Blue steel Santoku knives follow a Japanese all-purpose profile with blades around (5-7 inches (130mm to 180mm). Thin double-beveled edges, a flat belly, and a low tip support steady push cuts, linear slicing, and precise dicing with limited rocking. Finishes include damascus and kurouchi, paired with ebony, red ebony, buffalo magnolia, or teak handles.

Blue steel, also called Aogami, appears in Blue #2 and Blue Super grades. These high-carbon cores reach high hardness and hold keen edges for long periods, while remaining responsive to sharpening. Reactivity is expected, with patina forming over time; stainless cladding is common. Wipe dry after use to manage rust.
