Blue Super, also called Aogami Super, is a carbon steel engineered for edge holding, using carbon with tungsten and molybdenum plus small amounts of vanadium and chromium. The Santoku format keeps the blade around 165 millimeters and applies a lean double bevel with a low tip for controlled board contact. Damascus cladding is common and adds support around the core.

Edges take a refined finish yet keep bite through long prep sessions. Because corrosion resistance is limited, the surface will darken into a stable patina. Maintain by rinsing by hand, drying immediately, avoiding harsh detergents or dishwashers, and touching up on water stones when needed.
