Japanese kurouchi Santoku preserves the black oxide from forging rather than polishing it away. The residual scale creates a tough, uneven surface that helps food release and slightly resists surface rust while keeping weight low. It frames a carbon core at the edge, shaped thin with a double bevel and the characteristic flat belly and low tip. Sizes are typically 150 or 165 mm. The dark skin is not paint and will wear gradually, revealing a living patina. Routine care: rinse by hand, dry at once, avoid long soaks or harsh scrubbers, and keep the blade dry between tasks.
