VG-5 steel originated in Japan as a specialized cutlery-grade stainless steel developed by Takefu Special Steel Co. This high-carbon stainless steel contains approximately 1.0% carbon, 15% chromium, and small amounts of molybdenum and vanadium. VG-5 offers an excellent balance of sharpness, durability, and corrosion resistance, making it ideal for professional kitchen environments. The steel holds a razor-sharp edge while remaining relatively easy to sharpen compared to other high-hardness steels. When properly heat-treated, VG-5 achieves a hardness of 59-61 HRC, providing knives with exceptional cutting performance without sacrificing toughness.
