On Santoku blades in the 150–180 mm range, the slim octagonal or oval profile encourages a precise pinch grip and shifts balance slightly forward for steady board work. The unfinished or waxed surface offers secure traction and low weight. Care is simple: hand wash only, dry handle and tang, avoid soaking or dishwashers, and condition wood and horn with a light coat of camellia or mineral oil.
